della cucina italiana

La cucina italiana è conosciuta e apprezzata in tutto il mondo: ogni piatto raccoglie in sé la storia, la cultura e la tradizione del nostro Paese e delle sue Regioni.

Alitalia è orgogliosa di offrirle i suoi esclusivi menù regionali, dandole l’opportunità di assaporare il vero “Made of Italy” su ogni volo. Oggi vi accompagniamo alla scoperta dei profumi e dei sapori della Liguria.

La cucina ligure è in grado di sfruttare ciascun alimento fornito dal mare, dalla terra e dall’attività dell’uomo. Fra le ricette tradizionali troviamo sia piatti a base di pesce e crostacei come la buridda e il cappon magro, sia piatti di carne come il coniglio alla ligure e la cima alla genovese. Molto diffuso anche l’utilizzo delle erbe selvatiche che, per via dell’abbondanza delle piogge, crescono in gran quantità. La pianta aromatica ligure per eccellenza è il basilico: ingrediente base del pesto alla genovese, ormai famoso in tutto il mondo.

Impossibile parlare di cucina ligure senza citare la focaccia, che appare sulle tavole dei genovesi intorno alla metà del 500. Reinterpretata in versione sottilissima e ripiena di formaggio diventa la focaccia di Recco, nata nella città dallo stesso nome. Durante il nostro viaggio, vi faremo sperimentare il meglio della Liguria in ricette reinterpretate in chiave moderna dal nostro chef.

今や世界で知らない人はいないイタリア料理。 実は一品一品がまさに各州の歴史、文化、伝統の賜物なのです。 アリタリアは、イタリアを代表する航空会社として、誇りを持って イタリア各州の郷土料理をご紹介してまいります。すべて“Made of Italy“ 本場イタリアの味わいです。 本日は、北イタリア、リグーリア州のお料理をご用意いたしており ます。 リグーリア州の料理は豊かな海や陸の幸はもちろんのこと手で 調理される食材をすべて使用しています。 伝統料理の代表にブリッダ(リグーリア風シーフードの煮込み)や カッポン・マーグロ(リグーリア風シーフードサラダ)といった魚介 類をベースにしたお料理から、リグーリア風ウサギ料理やチー マ・アッラ・ジェノヴェーゼ(子牛の詰め物の煮込み)といった肉料 理があります。 雨に恵まれた地域で、野生のハーブがよく育つことから料理には よくハーブを使用します。リグーリア州のハーブと言えばやはり バジル、世界的に有名なジェノヴェーゼ・ペーストのベースとな る食材です。 また、フォカッチャを語らずして、リグーリア料理とはいえません。 ジェノヴァの人々の食卓にフォカッチャが登場するようになった のは1500年代でした。チーズを詰めた極薄の生地で作られたも のが「レッコのフォカッチャ」といい、ジェノヴァにあるレッコとい う町の名前に由来しています。 本日のフライトでは、私どものシェフが郷土料理を現代風にアレ ンジした斬新なリグーリア州のメニューをご賞味ください。 美味しいイタリアンをお楽しみいただき、素敵な空の旅となりま すよう!

of Italian cuisine

The excellence of Italian cuisine is recognised all over the world: each single dish encapsulates the history, culture and traditions of Italy and its Regions.

Alitalia is proud to present its exclusive regional menus and to offer you the opportunity to taste real Italian cooking on each flight. Today we will be taking you on a culinary voyage to Liguria with all its marvellous aromas and flavours.

When Ligurians roll up their sleeves in the kitchen, they have a knack for extracting the best out of all that the sea, the land and man’s toil has to offer. Traditional fare ranges widely from dishes made with fish and shellfish, such as buridda (seafood gently braised in tomato sauce) and cappon magro (a seafood and vegetable salad), to meat-based dishes, such as Ligurian-style rabbit (braised with pinenuts and olives) and cima alla genovese (stuffed veal breast). Frequent rainfall leads to a lush growth of wild herbs and ample use of them is made in local recipes. The quintessential Ligurian aromatic plant is, of course, basil: being the main ingredient in pesto, its fame has spread far afield from Genoa to all over the world.

Then Ligurian cooking wouldn’t be Ligurian cooking without focaccia (flat bread) which has been gracing Genoese tables since the mid-sixteenth century. The city of Recco has given its name to a crispy and flavour-packed version which is rolled out until it is paper-thin and filled to bursting with creamy cheese. During the journey, you will be able to explore the best of Ligurian cuisine revisited by our chef with a modern twist. Enjoy your flight and your meal!
