On behalf of the entire team at Roppongi Hills Club,

I would like to take this opportunity to thank you for your support and patronage extended to us in 2015. We look forward to offering you new and exciting experiences throughout 2016.

Inspired by his father, a renowned chef, Yusuke Kokubo worked at hotels in Osaka and Kanazawa before refining his skills for two years in Belgium and Luxembourg. After returning to Kanazawa and working for a further seven years,

he became the Pastry Chef at Roppongi Hills Club in February 2014.

古久保 裕介 六本木ヒルズクラブ ペストリー料理長 名門ホテルの料理長を務めた父の影響でパティシエを志す。 大阪、金沢のホテルで修業後に渡欧。ベルギー、ルクセンブルクで 2年間研鑽を重ねたのち、帰国。再び金沢で7年間経験を積み、 2014年2月に当クラブ ペストリー料理長就任。

Partnership with growers results in delightful desserts

日本ではりんごは主に生食しますが、ヨーロッパは加熱 調理が一般的。かねてより水分が少なく、火入れしても 砂糖に負けない酸味が残るりんごを探していました。私 がいくつもの農園に出向いて選んだのが、青森県弘前市 にある小規模農園のりんごです。袋掛けして育てた果実 を、枝付きのまま少しずつ回転し、日光を当てて色付けす る方法はとても手が掛かるもの。農園で収穫の手伝いを させていただきながら教わりました。美味しさのピーク、 木熟の状態で収穫できるのも産地直送だからこそ。造り 手の想いや苦労を知っているので、スタッフ一同、素材を とても大事に扱います。私自身、若い頃は難しくて美しい デザートを作ることに一生懸命でしたが、生産者との出 会いを通じて、素材ありきでレシピを考えるようになりま した。造り手の想いや素材の魅力を余すことなくお伝え できるように考えた、旬のりんごをまるごとお楽しみいた だける季節限定デザートに、ぜひご期待ください。

In Japan, apples are mainly eaten raw. But in Europe, cooking them is also common. I searched for varieties of apple with less moisture that retained their tartness after being heated.

Finally I found such apples at a small orchard in Hirosaki City, Ao-mori Prefecture. Grown in protective bags, they are rotated while still attached to their stems in a labor-intensive method that exposes each part to equal sunshine, ensuring even color distribution. Going to Aomori to assist with the harvest was a real learning expe-rience. The apples are picked at the peak of their ripeness and shipped directly, further ensuring they are at their best. Because we’re reminded of the grower’s hard work, our team members treat these apples with utmost importance.

When I was younger, I tried my best to create complex, beautiful desserts. But through my encounters with the grower, I started to devise recipes based on the ingredients, to thoroughly convey their distinctive appeal. I hope you'll come and sample some of these one-of-a-kind desserts!

Takashi Murakami: The 500 Arhats

In this first large-scale solo exhibition in Japan in 14 years, The 500 Arhats , Murakami s 100 meter-long painting will be shown in Japan for the first time along with a number of new works. 日本国内では14年ぶりとなる待望の大規模個展。全長100メートルに及ぶ超大作《五百羅漢図》 をはじめ、現代美術史への新たな挑戦となる新作まで、全作品日本初公開となります。

「村上隆の五百羅漢図展」

Vermeer and Rembrandt

：The Masters of The 17th Century Dutch Golden Age

The exhibition will showcase masterpieces of 17th century Dutch Golden Age painters including Delft-born Johannes Vermeer and Rembrandt van Rijn who are thought to be one of the greatest painters of all time, as well as Jan Steen, Frans Hals, and Pieter de Hooch. In addition to Vermeer s Young woman with a Water Pitcher and Rembrandt s Bellona which will be shown in Japan for the first time, this exhibition brings together 60 works from the collections of the Metropolitan Museum of Art in New York City, the National Gallery in London and the Rijksmuseum, Amsterdam as well as private collections.

Taisuke Koyama Exhibition

The works of Taisuke Koyama are currently being shown at Roppongi Hills Club. Koyama is now internationally recognized as one of the representative artists of young Japanese photographers of our age. Based on the idea that all things exist in a state of constant fluidity of change and transformation, the urban environment and artificial things can be perceived, as an extension of the natural environment. In this exhibition eighteen works will be exhibited including the very new work which was made in 2015. Please enjoy experiencing the vividness of Koyama s works with a great variety, which is from the works that was locally made on an island in Setouchi Art Triennale to the new work using the latest digital devices.
