Mr.Oka : Kaiten-zushi has an interesting history.

①The first kaiten-zushi bar was opened by Mr. Shiraishi Yoshiaki, a sushi chef,

  in Osaka in 1958.

②It made sushi more popular in Japan. Pat : Really ? How did he get the idea ?

Mr.Oka : He got the idea ③when he saw bottles at a beer factory. ④They were traveling on a conveyor best.

Pat : Is ⑤that true ?

Mr.Oka : Yes. The kaiten-zushi belt moves at ⑥eight centimeters a second. That's the perfect speed for customers to pick up plates.

Pat : That's great ! Mr. Shiraishi was a man of ideas.

⑦His idea helped to make sushi more popular in the world.

Today there are a lot of Japanese restaurants ①all over the world. ②

Do you know why Japanese food has become so popular ? Many people think that Japanese food is healthy.

As you know , traditional Japanese dishes use fresh fish and vegetables. ④

From the graph next to the map, ⑤

we can see how fast Japanese restaurants are increasing in number in the U.S. There were about 4,000 Japanese restaurants in 1995.
