With 21 thematic seminars aimed at disseminating insights related to wine and gourmet food, visitors were treated to a buffet of business ideas and inspiration. Of these, 17 seminars were

organized by exhibitors from country pavilions namely, Germany, Greece, Portugal (Vinho Verde), Spain, Tunisia and Georgia to introduce country-specific specialty wines and 4 seminars were

held by organizer and reputable wine magazine in Japan, Wine Kingdom.

Report

2018年4月11∼ 13日、東京ビッグサイトにてワインと食の見本市「ワイン&グルメ」が開催され た。第9回となる今年の来場者数は、3日間で合計7万8011名を記録。ワインの輸入会社、ワイン に関するグッズや食品のほか、ドイツ、ヴィーニョ・ヴェルデ、ジョージアなどの生産者団体もブー スをかまえ、ワイントレンドに関する情報発信の場としても活用されている。

※同時開催の「ファベックス」「デザート・スイーツ & ベーカリー展」「食品&飲料 OEM マッチング EXPO」「ハラールマーケットフェア」「食肉産業展」「麺産業展」の 7 展合計 「ワイン王国ブース」のテーマは「パーソナル な思考に対応できるワインオペレーションの 提案」。ひとり焼肉、ひとり鍋など おひとり さま空間 を提供する飲食店が増えている。 ワインを楽しむシーンでも、今後 個のオペ レーション が大事になってくるのではない だろうか。そこで、ブースの中にパーソナル な空間を体験できるモデルルームを設置。AI スピーカーでの注文、卓上に置ける小型のワ インセラー、持ち運びができそのまま食洗機 にもかけられるグラスラック「グラズマター ズ」、いつでも手間なく適温でグラ スにサーブできるセラーサーバー 「ヴィノルンゴ」など、難しいオペ レーションが必要なくセルフで使 えるグッズや機器を完備した。  また、連日ブース内でセミナー を開催。飲食店へのトレンド発 信の場として、ロゼワインの多 様性や導入メリットなどを説く「ロゼワイン セミナー」、グラス1杯からワインをデカン タージュできるステンレス製のワイングッズ 「BIRDY.」のデモンストレーションを行った。 ワイン ジャパン 究極のパーソナリティ空間のモ デルとして設置したニュージー 航空のシート。ゆったりとした 座席、インターネット環境が整 い、映画や音楽などエンターテ インメントが楽しめ、料理とド リンクが提供される 働き方改革で、会社や家 だけではなく場所を選ば ず仕事ができる時代がく る。パーソナルを突き詰 めた飲食店こそが次世代 のトレンドになるだろう 愛知県豊田市で自動車部品など を作る横山興業㈱。「BIRDY. ブ ランドマネージャー」の横山哲 也氏が実演。デカンタージュ前 と後を参加者に飲み比べてもら うと「おーっ!」と、その違い にどよめきが上がった 生産国や品種別でなく、個人の嗜好に合 わせたワインりスト作りを提案。出展者 から提供されたワインを、参加者にサー ビスにワインの特徴などについて説明 パネルディスカッション ソムリエたちによるパネルディスカッ ション。今年のテーマは「日本のワイン業 界が目指すものと2018年のワイントレ ンド」。パネリストに「アピシウス」 シェ フソムリエ情野博之氏、「ティエリー・ マルクス」「ビストロ・マルクス」シェフ ソムリエ谷川雄作氏、「サッカパウ」シェ フソムリエ梁世柱氏を迎え、グローバル 化する日本のワイン市場、現在と未来、 2018年ワイントレンドは?、2020年の 東京オリンピックを見据えて飲食店の現 場はどう変わる? といったテーマについ てそれぞれの意見を交わした  ワイン王国ブースでは「ロゼワインセミ ナー」を毎日開催。講師にJSAシニアソ ムリエの五鬼上泰樹氏を迎え、ロゼワイ ンの魅力、店舗導入の利点とアドバイス、 店でのサービスポイントや料理とのマリ アージュなどをたっぷりと紹介した。最 終日には「ティエリー・マルクス」「ビス トロ・マルクス」シェフソムリエ谷川雄作 氏との座談セッションを行い、現場での ロゼワイン企画
