Light and grassy and slightly stony to start. In time there’s sweet persimmon and nut on the nose. And on the palate is a layer of sweet lime, green fruits then a hint of smoke and a buttery meadow sweet/chamomile note. Light to the point of fragility.
Quite full on the nose. There are notes of honey and wax, resin and oak. There are notes of gentle smoke and cacao, hints of cooked fruit and a nutty note. And on the palate it is sweet and rich. There are crisp notes of mixed peels, raisin and custard with a little zest and plenty of oak.

Good body with plenty of nut oils and zest, a pleasant floral character with a little tropical fruit and a rooty note on the nose.And on the palate it is smooth and soft with good sweetness and winter spice. A lovely citrus note develops with more tropical fruit notes and a little rum.
The nose is quite thick and resinous, there is a pleasant oiliness with zesty citrus and peels and a hint of sherry. Plenty of oak and orchard fruits. The palate is of medium-body with green notes and an earthen note, plenty of wood resin and a floral character with zest and sherried peels. The finish is of good length with fruit and zest.

Polished to 50% of the original grain and produced with a more delicate and expensive method. This is a fruitier and slightly sweeter style of shochu, with a lasting finish that offers lots of melon but also pepper, late in the finish neat butterscotch notes. Very silky and well-balanced, a lovely and elegant sipper.

HOCHU LIST “JAPANESE SPIRITS”
Made from underground water of the island and brown sugar. What makes this shochu unique is its aging technique called "onkyo jukusei." the sound mature method (vibro transducer) where the shochu is aged for three months in a cellar where classical music is played and the sound vibrations from the music allow the components of the shochu to blend smoothly and mature slowly in a relaxed way just as its name suggested. all of this hardwork is done by a female toji. Good to drink on the rock or straight to enjoy its dry clean crisp flavor and smooth feel.
This shochu has the aroma of cherry and grapefruit, bute has that earthy nose and a hint of wild flowers. What makes it unique from other imo shochus is the yellow koji, which gives it much more floral aroma and palate. Tomi No Hozan is even drinkable neat. A buttery mouth feel accompanies the pleasantly sweet floral taste. Oyuwari (hot water) really opens up the flavor, tasting almost like a tea rather than a liquor. Best paired with Grilled foods, dried fish, fried foods.
Kuro Isanishki has the unmistakable earthy nose of an imo shochu. This yields to a buttery soft mouthfeel. Surprisingly supple given what’s in store otherwise. An extremely light sweetness yields to a very dry, tight finish. The dryness would overwhelm except the soft mouth provides enough mellowness to create an interesting contrast.
